I am sharing a delicious and simple cold pasta salad today that we make several times a summer.
I got this recipe year and years ago from one of those recipe cards that a grocery cashier throws in your bag. I have changed it a little over the years but this remains a family favourite of ours and it is my go to pot luck item to bring because it’s so simple.
To make Asparagus and Sundried Pasta Salad you will need:
One box of cooked and cooled bowtie pasta
One bunch of asparagus cut into 1″ pieces
One small red onion sliced thin
One 210ml jar of sliced sundried tomatoes packed in oil
1 cup of Mayonnaise
1/4 cup of water
4 to 5 Tbsp white wine vinegar
Salt and Pepper to taste
When your asparagus is cooked, plunge into cold water to stop the cooking process. When draining the sundried tomato, pat off some of the oil, but not too much. A little oil will keep the pasta from sticking together.
Place your cold pasta, cold asparagus, sundried tomatoes and sliced onion into a large bowl.
To make the dressing in a small bowl add the mayo, water, vinegar and salt and pepper to taste. Whisk together and adjust to your taste. I usually end up adding more vinegar.
Pour dressing over the salad and mix gently. Serve cold. This pasta salad will hold well in the fridge for a day or two but will drink up the dressing after a while. I like to make some extra dressing for the second day, if we have any left over!
If you want to make this salad more of a full mean, add some sliced mild Italian sausage.
